Quasi-Raw: 3 Bean Tacos with Tomatillo Salsa and Avocado Mousse

I have not posted here in over a MONTH!  Have you missed me?  I have missed you, my two readers.  Anyway… On to business and blogging!  Pictures are coming tomorrow… I forgot to bring my camera with me to work 😦  where I am currently blogging… and sipping coffee…and surfing the internet… I love my job.

My absolutely nutty parents watched a documentary about 5 days ago about the benefits of raw food.  Since watching this (where a man stated that eating over 50% of your food cooked can cause auto-immune diseases and so on and so forth), they have decided to only eat about 20% of their food cooked, so it has been a week of museli, salad, and tomato and avocado cubes…

Mostly delicious!  The real highlight so far, though, has been last night’s meal.  My mom was ill, so I sort of grabbed the reins and made dinner for the fam.  Since we are going by the 20% rule, dinner is the only meal in which we eat cooked items. 

For the main course, I used store-bought corn tortillas and made the filling a cooked bean mixture.  Other than that, I topped it with fresh shredded romaine, cilantro, and home-made tomatillo salsa.  The tomatillos lend a crisp sweetness to the mix and also have a lot of naturally-occurring pectin in them.  They will keep your salsa tasting like it was just made. 

It’s a very bright and fresh spring dish.  You should definitely try it at home.  I would order this meal even if I weren’t eating raw.  It was filling, flavourful, and hearty.

Tomatillo Salsa
makes about 2 cups

1 tomatillo, quartered
5 tomatoes, quartered
1 large shallot (about 1/2 cup of diced product)
1 jalapeno with seeds removed
large handful of cilantro

Place ingredients in blender.  Blend until smooth.  Enjoy!

3 Bean Tacos
makes about 12 tacos

For this recipe, you can use any beans or lentils that you would like.  I just used what I had on hand.

Ingredients
1/2 onion, diced
1/2 14 oz. can Rotel tomatoes (or any blend that has tomatoes and green chiles)
1 15 0z. can Pinto Beans
1 15 oz. can Black Beans
1 15 oz. can Red Kidney Beans
1/2 tsp ground cumin
1/2 tsp oregano (preferably Mexican oregano, but the Italian kind works just as well…)
1/2 tsp thyme
1/2 tsp ground red pepper
1/2 tsp minced garlic
1 tsp chili powder
Salt and pepper to taste
Store-bought corn tortillas

Start by sauteeing the onions in a little bit of cooking spray.  When the onions are golden brown, drain and add the beans and tomatoes.  Add the seasonings and combine.  The spices soak up a lot of moisture, so if the mixture looks dry, add a little water. 
Simmer for 4-5 minutes.

Top corn tortillas with bean mixture, fresh lettuce, cilantro, and salsa. 

I know this sounds totally weird, but avocados are delicious for desserts!  Since their flavour is so subdued, they lend a creamy base for any fruits you want to add to create either a raw fruit pudding or sorbet.  Since it is so creamy and has healthy fats in it, it has the texture of pudding when it first comes together and, when frozen, comes out like silky ice cream.  Yummy.

Avocado Mousse
4 servings, about 1/2 cup each

1 avocado, quartered
2 kiwis, cut into thirds
1 cup fresh pineapple, cubed
1 mango, quartered
1/4 cup honey or agave nectar
(If you are keeping the mixture overnight-add 1/2 tsp fruit pectin to keep it bright green)

Blend the ingredients together until smooth.  For mousse, spoon mixture into cups (if you’re not too strictly raw, a little bit of graham cracker crumbs in the bottom makes for a delicious textural contrast) and serve.  For “ice cream”: Pour mixture into bottom of 9 x 13 baking dish.  Freeze for 2 hours.  To keep the mixture from getting rock hard, you should drag a fork through it to “fluff” it every fifteen to twenty minutes.

Delectable, light, filling, and refreshing, this makes for the perfect spring-time meal… 

SERIOUSLY.  EAT THIS SHIT.  Your body will love you…

Bloggedy Blog Blog.

Hello, Enchanted Readers! (Do we still have any of those after two weeks of no posting? No? Oh, alright.)

With a series of school interviews, work interviews, hectic school and surgery, something had to go.  Unfortunately, it’s been working out and blogging – two of my only “me time” things!  I’m going to try to start getting up thirty minutes earlier each day to get a quick 15 minute fitness sesh and quick “good morning” blog post in.  We’ll see how long this lasts.

Multiple updates:

1. I’m starting school again in the fall.  Hellooooo, graphic design degree!  Yay, me.

2. I think I’m going to try out P90X.  Anyone else done it?  I’ve had friends who have had fantastic results and I really want to feel strong and fit again.

3. I bought my Clarisonic Mia today!  SO excited.  I’ve heard the first week or two can be pretty awful while your skin adapts (yucky pimples and such) but I don’t think I’ve read a single negative review overall.  Hey, if it works it works!  I picked the turquoise and got “Beautiful.” engraved on the back – a little reminder to give myself some positive self-talk each morning to start the day.

4. Moving to Kansas City in the fall as well.  Let the apartment hunt begin…

5. Tomorrow is EASTER!  My whacky family is having Italian apparently?  Stay tuned, Sarah and I will give you a breakdown of whatever dessert we decide to bring.

I have this thing called a “blog.”

It’s where I blah blah blargh about nonsense every day.

Or in the case of this week, most days.

It’s totally narcissistic, really.  HEY, EVERYONE!  COME READ ABOUT MY LIFE!

I try to keep it pertinent to healthy living, but sometimes I digress and tell you about things like:

Shopping trips.

The job hunt.

Vacations.

Or my new life plan.  Ala Katie, I’m thinking this whole going back to school thing might be the best solution.  After sending out a gazillion resumes and bashing my head against my keyboard for the last month, I don’t think getting a “graphic design degree preferred” job is going to work without actually getting the preferred graphic design degree.  Plus, the prospect of taking classes I’m actually interested in sounds way appealing.

Two more years of school to be able to do what I love?  It doesn’t sound too terrrible…

A good blogger would snap pictures right and left as she spends five lovely, perfect hours at the mall with her sister.

A good blogger would also remember to charge her camera ahead of time so she could do so.

I’ve been in a bit of a winter-funk lately.  I tried sleeping more.  Doing this detoxin’ thang to get my body in balance.  Smiling more (I actually came to the realization that this was missing when I went to my 8 pm yoga class Monday night, tried to smile in one of my poses, and realized my mouth felt all funny because I hadn’t smiled the ENTIRE day. And that’s just not how we do things in an enchanted life, lady).  Meditation, yoga, family time – I have been trying and trying, but just couldn’t shake the general feeilngs of sadness.

Solution for this morose mama? 

Shopping, shopping, shopping.  Granted, this isn’t always a solution, but it sure was yesterday.  I haven’t selflessly spent money on myself in a long while – typically I spend money, but carry around some pretty intense feelings of guilt about it.  NOT THIS TIME!  I spent the whole thirty-minute car ride home reciting mantras about how I was allowed to be happy and be free of guilt and I am feeling pretty fabulous today.  Still on my list of purchases before graduation: a suit and my camera love.

Best purchase yesterday: Urban Decay Eye Shadow Primer.  This stuff is phenom and makes your eye shadow go on smooth, vibrant, and with a ton of staying power.  100% worth the 22 bucks to keep me looking awake and dolled up all day long instead of sleepy and bare-faced by noon.


There’s really no quicker way to destroy your relationships and feelings of self-worth than being a cranky old bitty all the time – no one wants to hang out with that girl.  Whether it’s taking a minute to breathe, taking a day off work, going to a yoga class, busting out a run, stopping by a pub to enjoy a St. Patty’s day green beer, or heading for the mall to pick up a little something that makes you smile, do something today that makes you feel fabulous.  And seriously – pick up that eyeshadow primer, diva.

You’ve got a diem to carpe – go get it!
